Had it not been for my daughter, I'd have never taken to baking. It's her love for baked food that opened a whole new world for me. Sifting flour, measuring ingredients, whisking eggs, softening butter, pouring vanilla extract....ooh! It's exhilarating or what! And the icing on the cake is seeing the apple of my eye relish it. That's the feeling which is completely inexplicable and totally rewarding.
It's banana bread this time. Moist, fluffy, sweet and crumbly. Perfect with a cup of coffee or a dollop of ice cream.
Here's how it is made.
Ingredients:
40g butter, unsalted and melted
40g granulated sugar
1 large or 2 small over-riped bananas
1 tablespoon full cream milk
1/4 tsp vanilla extract
1 egg
1/2 cup or 80g plain flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
Method:
In a large bowl, add melted butter and sugar.
Mix together plain flour, baking soda and baking powder.
Use a fork to mash the banana into the flour mix.
Add milk, vanilla extract and egg into the bowl.
With the help of a whisker beat them until well combined.
Allow it to rest for 10 minutes.
Pour the batter into a well greased pan.
Bake in preheated oven at 170°C for 35 minutes.
Once baked, cool it on a wire rack. After about 10 minutes sprinkle with powered sugar and serve warm with a nice dollop of ice-cream or a drizzle of maple syrup.
