Cheesy Garlic Bread

Who has not heard of or not had garlic bread. This is the most common yet delicious accompaniment to any dish. Infact, I feel garlic bread is the king of side dishes.


This recipe is very simple. Other than the proofing time, this recipe comes under 20 minutes.


Here's how it's made.


Ingredients:


Garlic Bread Dough:

  • 1 cup warm milk

  • 1 teaspoon instant dry yeast

  • 1 teaspoon sugar

  • A pinch of salt

  • 3 cloves of garlic, finely chopped

  • 1 teaspoon dried oregano or fresh oregano leaves finely chopped

  • 1.5 cups plain flour

  • 2 teaspoon olive oil


Garlic Butter Spread:


  • 1/4 cup butter, melted

  • 3 cloves of garlic, finely chopped

  • 2 tablespoons coriander leaves, finely chopped


Garlic Bread Filling:


  • 1/4 cup mozzarella cheese

  • 1/4 cup ricotta cheese

  • 2 teaspoon chili flakes

  • 1 teaspoon oregano

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper powder

  • 2 cloves of crushed garlic

  • 2 tablespoons of finely chopped coriander leaves.


Method:


  • In a mixing bowl add the milk, sugar and the yeast. Stir and keep the mixture in a warm place for the yeast to activate.

  • Once the bubbles start to form, add the flour, salt, garlic, oregano and knead into a dough.

  • Add the olive oil, coat the dough and cover it with a cling wrap and keep it in a warm place until the dough doubles in size. Roughly about 30 minutes.

  • After 30 minutes, punch down the dough and release the air and repeat the above process four times. Total proofing time should be 2 hours.

  • Once the dough is well rested, roll it in a 10" round ball. In a small bowl combine butter, garlic and coriander leaves and apply the garlic butter spread generously on one half of the dough with a pastry brush.

  • In a separate bowl combine all the ingredients mentioned in the garlic bread filling. Fill this cheese mixture on one half of the dough on top of the garlic spread.

  • Now gently fold the other half of the dough and seal the edges firmly. It should resemble the half moon shape.

  • With a knife add the gashes to the dough lengthwise.

  • Transfer the dough on to a baking tray lined with a parchment paper.

  • Give a eggwash. To prepare eggwash, break an egg and add one teaspoon of milk and whisk together. Apply this coating to the dough. If you are a vegetarian, you can simply apply melted butter.

  • Place the tray in the preheated oven at 180°C and bake for 15 minutes.

  • Once done, cool it on a wire rack and define the gashes by further running the knife over the gashes.

  • Your cheesy garlic bread sticks are ready.
