Chocolate Ombre Cake

When Friday winks at me and questions..what's cooking? I say it's Chocolate Ombre Cake. Simple, fun to make, the magic happens when the coloured batter is gradually added to create this ombre effect.



Ingredients:


Cake batter

250gm salted butter, softened

160gm sugar

75g milk

1/2 tsp vanilla extract

4 large eggs

120gm plain flour

100gm cake flour

2 tsp baking powder


Cocoa paste

25gm cocoa powder

50gm boiling water

50gm sugar

1/3 tsp baking soda

1/2 tsp vanilla extract


Method:

Preheat your oven to 180°C

1. Make cocoa paste. In a bowl add cocoa powder. Then gradually add boiling water and sugar. Add in baking soda and vanilla extract. Combine well into a smooth paste with a whisker.

2. Cream butter with sugar until pale and fluffy.

3. Beat in eggs, one at a time. then add in vanilla extract.

4. Put half the flour in, slowly mix with mixer, then add in milk and the remaining flour.

5. Grease your 8" square pan with non stick spray and line up the bottom of the pan with parchment paper.

6. Scoop 325g of batter into the cocoa paste, mix and take out just 325g of cocoa batter into a prepared pan. Tap the pan to remove any air bubbles.

7. Put 225g of cake batter into the remaining cocoa batter, mix and gently spread over the first layer. Tap again gently to remove their bubbles.

8. Top with remaining cake batter on the cocoa batter. Gently tap the pan.

9. Bake at 180°C for 60 minutes in the middle rack.

10. Check for the doneness by inserting a toothpick into the center of the cake. If comes out clean, bring it out of the oven and allow it cool on the cooking rack.


The cake is now ready to be cut and served.
