These easy-to-make treats are flaky, flavourful and densely moist with crisp, crumbly edges. Ready in less than 30 minutes, these are perfect companions for your teatime. Best thing about this recipe is, you just need one mixing bowl and your bare hands to create these beauties. Enjoy these with a generous topping of your favorite jam or just plain butter.
Here's how these are made:
Ingredients:
4 2/3 cups or 680 gms plain flour.
3/4 cup or 170g butter, frozen
3 tspns baking powder
1/2 cup or 113g sugar
1/2 cup or 113 gms cranberries or raisins
1 1/4 cup 300ml milk
2 eggs , beaten
Method:
In a mixing bowl, add plain flour.
Using a pastry cutter cut the butter into small cubes and add them into the flour until fully crumbed and resembles course breadcrumbs.
Stir in cranberries, baking powder and sugar.
In a small mixing bowl, whisk eggs and milk until well combined. Pour this mixture into flour mix and stir until a soft dough is formed.
Transfer the dough to a floured surface and press to 1 1/2 inch thick. (if the dough mix is dry add little milk by teaspoon until the dough starts to loosely form a shape).
Cut scones out with a round 3 inch cookie cutter.
Remember they need to be perfect. If they just retain their shape of that of a rough ball it's fine.
Repeat the process until the entire batch of dough is used.
Place the scones on a baking tray lined with parchment paper.
Bake at 425°F or 210°C for roughly 20 minutes. Cool on wire rack.
Serve warm or at room temperature with butter, jam, or fresh cream.
