It's Diwali time folks. Homemade sweets is a tradition that every Indian home follows during this festival of lights. Presenting here is one of the most simple and yet delectable sweet recipe called Khoya Barfi.
Khoya is a diary product made usually from whole milk powder or milk thickened by continuous heating and condensing into a thick mixture. Barfi is an Indian fudge made from khoya and sugar.
One of the simplest and omnipresent Indian sweets on every occasion.
Here's how these are made.
Ingredients:
400 grams khoya or Mawa. I used store bought khoya.
3/4 cup or 150 grams granulated sugar
3 tablespoons pistachios chopped for garnishing
1/4 teaspoon cardamom powder
1 teaspoon rose water
A square 8x8 inches baking pan well greased with cooking spray or ghee (clarified butter).
Butter paper or parchment paper to line the greased pan.
A sharp long knife to cut the Barfi into desired shapes once cooled.
Method:
Begin with greasing the baking pan well with cooking spray or ghee and set it aside.
Grate 400 grams khoya. Transfer the grated khoya to a large thick bottom skillet. This is very important as this will give good texture and shape to the final Barfi.
Add 150 grams sugar and mix well.
Cook on low flame and continuously keep stirring uniformly.
After 7-8 minutes, the khoya and sugar will now start to melt.
Keep stirring making sure a uniform texture is obtained all through. It should resemble a nice creamy consistency.
Continue to cook, keeping the flame low, until the mixture starts to thicken.
After 20 minutes, the mixture starts to separate the pan.
Now add 1/4 teaspoon cardamom powder and rose water and mix well.
The entire stirring process should not take more than 20-22 minutes.
Transfer the prepared mixture into the greased pan lined with baking paper.
Using a spatula, uniformly distribute the mixture and tap it to form a square block.
Now, top with 3 tablespoons of chopped pistachios and pat gently.
Set it aside for couple of hours.
Once the Barfi is set, un-mould and cut into pieces of your desired shapes. Generally either they are cut in diamond shape or in squares.
You can either serve them immediately or store them in an airtight container for about a week in the refrigerator.
