Momo Chutney or Red Chilli Dipping Sauce

Momos are such an integral part of the North Indian snack culture that the thought of it makes you want to devour them. But momos are incomplete without it's partner in crime - the momo chutney. Yes!! It's this chutney that makes momos tasty and mouth watering. Its spicy, it's sour and incredibly flavourful. The smooth texture and gorgeous red colour from red chillies is what makes this dish so desirable and good looking. Super simple to make, this definitely comes under the category of "easy recipes".




Here's how this is made.


Ingredients:


  • 20 Whole red chillies

  • 3 large tomatoes

  • 4 cloves of garlic

  • 1 medium size onion

  • 2 tablespoons of Oil

  • Salt to taste

  • 1 teaspoon vinegar

  • 1 teaspoon soya sauce

  • 1 tablespoon of sugar

  • 2 tablespoons tomato sauce.

  • 3 cups of water




Method:


  • In a bowl, add the whole red chillies and water.

  • Soak in for about an hour.

  • Wash the tomatoes and with the help of a knife put some gashes on each tomato as we are going to blanch them.

  • After an hour, pour the soaked red chillies along with the water in a boiling pot.

  • In the same boiling pot, add tomatoes and peeled onion.

  • Let all the three ingredients boil for about 10-12 minutes.

  • After 12 minutes, remove the tomatoes and put them in a plate and allow the red chillies and the onion to boil for another 8 minutes.

  • At this stage you will see that the skin of the tomatoes has started to separate from the point of gashes. Remove the skin and discard.

  • In a medium size blender jar, add the boiled and drained whole red chillies and the onions along with the blanched tomatoes.

  • Throw in the peeled garlic and blend into a smooth paste. Set it aside. Make sure you cover your face and protect your hands as chillies are very notorious and will make you feel their presence.

  • Now in a thick bottom pan, add the oil and transfer the chilli paste into the pan. Allow it to simmer for about 7-8 minutes.

  • After this stage, add the sugar, vinegar, salt, tomato sauce and soya sauce.

  • Let it simmer for about 5-6 minutes more and shut the flame.

  • Let it cool down and serve with your hot steamed momos.
