Tandoori Broccoli

A few days ago we had been to our friends place for an impromptu catch up. Our friends served us this simple yet delicious tandoori broccoli as starters and we just loved it. It was healthy and appetizing and I decided to learn and make it at home.

Here's the result. This appetizer is quick and super easy to make and does not need any preparation. Low on calories, tandoori broccoli is something everyone can try at home and do not need any tandoor (a cylindrical clay oven with burning coals inside to cook the food).







Here's how this appetizer is made.


Ingredient's:

  • Broccoli florets - 15-18

  • Hung Curd or thick yogurt or Sour Cream - 1/2 Cup

  • Ginger garlic paste - 1/2 teaspoon

  • Chilli powder - 1/2 teaspoon

  • Black pepper powder - 1/2 teaspoon

  • Cardamom powder - 1/2 teaspoon

  • Coriander powder - 1 teaspoon

  • Turmeric powder - 1/4 teaspoon

  • Salt - as per the taste.

  • Lemon juice - 2 tablespoons

  • Mustard oil - 1-2 tablespoons

  • Chickpea flour - 2 tablespoons

  • Green chutney - 1 tablespoon.





Method:


  • We will first start with blanching the broccoli.

  • Begin with cutting the broccoli into bite sized florets.

  • Bring a pot of water to boil.

  • Add salt to the boiling water.

  • Now gently add the florets into the water and allow them to boil for 2-3 minutes at the max.

  • Simultaneously, prepare the ice bath by taking a bowl of water filled with ice cubes.

  • After 3 minutes, strain the broccoli and transfer them into the ice bath to immediately stop cooking. The result is gorgeous vibrant green broccoli.


  • Keep them aside and prepare the marination for the florets.

  • In a separate bowl, add the hung curd and all the other spices mentioned in the ingredients section.



  • Coat all the florets generously and leave them for about 10-15 minutes.



  • Take a thick bottom frying pan or a grill pan.

  • Spray with cooking oil and place the florets on the pan and grill them on medium high flame.



  • Roast them on all sides until they turn golden brown in colour.

  • When you see all the sides of the broccoli turn charred and caramelized, you know they are done.

  • Transfer these to your serving tray and serve hot.





Air-Fryer Method




Once you have marinated the broccoli florets, pop them in the Air-Fryer for 7-8 minutes at 180°C. After 5 minutes make sure you turn them upside-down for even cooking.




That's it!! Your healthy appetizer is ready to be served.
