Vanilla Cup Cakes

These moist, fluffy cupcakes are extremely delicious and super easy to make. So much so that my 14 year old and her best friend just nailed it with ease.


Topped with simple homemade whipped cream frosting, they were just perfect.


Here's how these are made.



Ingredients:


  • 1 1/5 cup or 190 grams plain flour

  • 1 1/4 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup or 115 grams unsalted butter, softened

  • 1 cup or 200 grams granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

Whipped Cream Frosting:


  • 2 teaspoons vanilla extract

  • 2 cups heavy cream with minimum 35 % fat content.

  • Food colour of your choice. We used baby pink colour.

Instructions:

Vanilla cupcakes:

  • Preheat the oven to 176°C. Line a 12-count muffin tray with cupcake liners. We made small bite sized cupcakes hence ended up making 24 of them and repeated the process twice.

  • In a large bowl, whisk together the flour, baking powder and salt.

  • In a mixing bowl using a hand mixer, beat the butter and sugar until light and fluffy.

  • Beat in the eggs one at a time, then pour in the vanilla extract. Mix until well combined.

  • Slowly add the dry ingredients to the wet ingredients and mix until well combined, making sure not over mixing the batter. We don't want to incorporate too much air into the batter.

  • Scoop the batter into the cupcake liners, filling them a little over half way full. As we made small bite sized cupcakes, this batter made around 24 of them.

  • Bake for 18-22 minutes or until a wooden toothpick inserted into the center of the cupcake comes out clean.

  • Remove from the oven and allow to cool for a couple of minutes. Remove all of the cupcakes from the pan and transfer to a wire rack to cool completely.

Frosting:

  • In a large mixing bowl, using the hand mixer, beat the whipping cream on medium speed until soft peaks start to form. Roughly about 4-5 minutes.

  • Add in the vanilla extract and mix on low speed until well combined.

  • Slowly add the food colour, and with the help of spatula gently fold over the whipping cream for a few minutes until the frosting is smooth and well combined and desired colour is obtained.

  • Frost the cooled cupcakes as desired.
